Ayam Cemani

Ayam Cemani is a distinctive Indonesian chicken breed known for its exceptionally dark appearance. Its feathers, skin, comb, wattles, legs, and other visible tissues are typically black due to a genetic condition called fibromelanosis.

The breed originated in Indonesia and has become highly sought after internationally because of its unusual appearance, rarity, and distinctive genetic characteristics.

Unlike many specialty poultry breeds that are primarily recognized by feather color, Ayam Cemani is notable for its extensive dark pigmentation across much of the body.

At Rookcrest Livestock, Ayam Cemani is part of our selection of rare and specialty poultry for customers interested in unusual chicken breeds, breeding projects, poultry collections, and distinctive farm flocks.

What Makes Ayam Cemani Different?

Ayam Cemani stands out because of its extensive black pigmentation.

A well-developed Ayam Cemani can have:

• Black feathers
• Black skin
• Black legs and feet
• Black comb
• Black wattles
• Dark eyes
• Dark beak
• Dark internal tissues

The breed’s unusual pigmentation comes from fibromelanosis, a genetic trait that causes increased deposition of melanin in body tissues.

The feathers can appear black at first glance, but sunlight may reveal a greenish or beetle-green sheen.

This combination makes Ayam Cemani very different from ordinary black-feathered chickens.

A Black Australorp, for example, can have black feathers while still having much lighter skin and other tissues. Ayam Cemani is recognized for its much more extensive pigmentation.

Ayam Cemani History

Ayam Cemani originated in Indonesia.

The breed is associated with the island of Java and, more specifically, the area around Temanggung in Central Java.

The name is often explained through Indonesian terminology. “Ayam” means chicken, while “Cemani” refers to the breed and is associated with the area from which the birds originated.

The breed developed within Indonesian poultry culture long before it became known internationally.

Its unusual appearance attracted attention outside Indonesia, particularly among poultry breeders interested in rare and unusual chicken genetics.

Ayam Cemani was introduced to Europe during the 1990s through Dutch breeder Jan Steverink, helping establish interest in the breed among European poultry keepers.

The breed later became increasingly known among specialty poultry breeders in North America and other parts of the world.

Ayam Cemani Appearance

Ayam Cemani has one of the most recognizable appearances among chicken breeds.

The ideal bird displays extensive black pigmentation.

Common characteristics include:

• Completely black plumage
• Black skin
• Black legs
• Black toes
• Black beak
• Black comb
• Black wattles
• Dark eyes
• Upright body carriage
• Greenish sheen on the feathers

The black coloration should extend beyond the feathers.

However, individual birds can show some variation in pigmentation. Small areas of lighter coloration may occur, especially around the mouth or other parts of the body.

For breeders interested in show-quality birds, consistent pigmentation is an important selection trait.

Ayam Cemani Feather Color

The feathers of Ayam Cemani are typically black with a metallic green or beetle-green sheen.

The sheen becomes easier to see when sunlight reflects across the feathers.

This gives the bird a different appearance from a dull black chicken.

The quality of the plumage can also provide useful information when evaluating breeding stock.

Breeders commonly look for:

• Deep black feathers
• Strong feather condition
• Even coloration
• Good body structure
• Healthy skin
• Correct leg coloration

The goal is to maintain the characteristic appearance while also selecting healthy, well-structured birds.

Ayam Cemani Size

Ayam Cemani is a medium-sized chicken rather than a giant breed.

Adult males are generally larger than females.

Depending on the breeding line and management, mature birds commonly fall within the following approximate ranges:

• Roosters: around 2 to 2.5 kg
• Hens: around 1.5 to 2 kg

Individual birds can vary.

Factors such as genetics, nutrition, age, health, and management can influence final size.

Because Cemani is valued primarily as a specialty breed rather than a large meat chicken, body size should be evaluated alongside pigmentation, structure, health, and reproductive traits.

Ayam Cemani Eggs

Cemani hens produce eggs, but their eggs are not black.

This is one of the most common misconceptions about the breed.

The eggs are generally cream-colored to light brown.

Egg production can vary between individual hens and breeding lines.

Factors that influence laying include:

• Age
• Genetics
• Nutrition
• Season
• Day length
• Health
• Housing
• Stress

Cemani is not primarily known as a high-production commercial layer.

The breed is more commonly kept because of its appearance and genetic uniqueness.

Ayam Cemani Hatching Eggs

Fertile Cemani eggs can be used to produce new birds when they come from a suitable breeding flock.

The eggs require careful handling before incubation.

Experienced breeders should pay attention to:

• Egg cleanliness
• Proper storage
• Fertility
• Incubation conditions
• Turning
• Temperature
• Humidity
• Hatch timing

The quality of the parent flock can have a major effect on the characteristics of the resulting chicks.

For breeders seeking strongly pigmented Cemani, selecting parent birds with good pigmentation and sound structure can help maintain desired characteristics.

Ayam Cemani Chicks

Cemani chicks are especially interesting because their dark pigmentation can become noticeable at an early age.

Young chicks require the same basic care as other chicken breeds.

A suitable brooder should provide:

• Appropriate warmth
• Clean bedding
• Fresh water
• Suitable chick starter feed
• Good ventilation
• Adequate space
• Protection from predators

As the chicks grow, their housing requirements increase.

Breeders can begin evaluating young birds for:

• Feather color
• Leg color
• Skin pigmentation
• Body structure
• Growth
• Temperament

Not every chick will develop into an ideal breeding bird, so careful selection becomes important as the flock matures.

Ayam Cemani Temperament

Cemani temperament varies between individual birds and breeding lines.

Many birds can be active, alert, and curious.

Roosters may also become protective of their flock.

Regular, calm handling from a young age can help birds become accustomed to people.

When selecting breeding stock, temperament should be considered together with:

• Health
• Body structure
• Pigmentation
• Growth
• Feather quality
• Reproductive ability

A visually impressive bird may not necessarily be the best breeding bird if it has poor structure or health.

Ayam Cemani Breeding

Cemani is particularly interesting for breeders because of its fibromelanosis.

The dark pigmentation has a genetic basis, which means breeding selection can influence how strongly the characteristic appears.

A good breeding program should focus on several traits rather than color alone.

Important characteristics include:

• Strong black pigmentation
• Black skin
• Black legs and feet
• Good feather quality
• Sound body structure
• Healthy growth
• Good reproductive performance
• Suitable temperament

Breeders should also keep accurate records of parentage.

This can help identify which breeding pairs consistently produce offspring with strong pigmentation and good overall structure.

Ayam Cemani Breeding Stock

Selecting breeding stock requires careful observation.

For a rooster, look for:

• Strong body structure
• Good leg development
• Deep pigmentation
• Healthy feathers
• Active but manageable behavior
• Good reproductive condition

For hens, consider:

• Consistent pigmentation
• Good body structure
• Healthy growth
• Egg production
• Reproductive performance
• Suitable temperament

Breeding decisions should take the overall quality of the bird into account.

The darkest bird is not automatically the best breeding bird.

Ayam Cemani for Backyard and Farm Flocks

Cemani can be maintained in a range of poultry systems when the birds receive appropriate care.

They can be kept by:

• Small farms
• Homesteads
• Backyard poultry keepers
• Specialty breeders
• Exhibition collections
• Rare poultry programs

They need suitable shelter, clean water, appropriate feed, secure fencing, and protection from predators.

Because the breed is valued for its appearance, keeping birds clean and maintaining good feather condition can also be useful for exhibition or breeding purposes.

Ayam Cemani Conservation and Rarity

Cemani remains uncommon compared with widely kept chicken breeds.

Its rarity is one reason specialty poultry breeders continue to maintain dedicated breeding flocks.

Maintaining a healthy population requires more than producing birds with black feathers.

Breeders should work toward preserving:

• Strong pigmentation
• Sound structure
• Reproductive ability
• Healthy growth
• Genetic diversity
• Breed characteristics

Responsible breeding can help maintain the breed while reducing the risk of selecting too narrowly for appearance.
